Many people wonder if amaranth can be eaten raw? Expanded amaranth is suitable for direct consumption. As a result of the aeration process, it was roasted like popcorn. It resembles prepared rice, and its grains are larger and lighter than unexpanded ones. In this form, amaranth can be added to porridge, it also tastes great with milk or yoghurt. And how do you cook grains in their natural, raw form? There are two schools. One is to add amaranth directly to boiling salted water. One cup of seeds to 3 cups of water is the perfect ratio. Then reduce the heat and cook covered for about 15-20 minutes. When the amaranth has absorbed all of the water, that's a sign it's ready to eat. Another option is to immediately douse the amaranth seeds with salt water and boil them until the water is absorbed. Amaranth can also be added directly to the soup. However, remember that it significantly increases its volume under the influence of cooking. The grains are also great for baking bread. Due to the universal taste, amaranth can be used in desserts, stuffed vegetables, soups and meat dishes.
