Bay Leaf - what is it?
The globally popular bay leaf is a plant raw material obtained from a plant with the graceful name bay laurel [Latin: Laurus nobilis]. This evergreen shrub, which can live for more than 100 years, is native to the Mediterranean region. Many people immediately think of laurel wreaths when they hear about bay leaves. This is not surprising, as the tradition of adorning the head with a laurel wreath has its roots in ancient Greece. The laurel wreath symbolized victory and outstanding achievements in various areas of life. In antiquity, it was widely believed that the laurel protected against deities responsible for lightning and thunder. For this reason, Emperor Tiberius always wore a laurel wreath during thunderstorms.

Well-dried bay leaves have a very pleasant taste and a spicy-bitter aroma. It is undoubtedly one of the most commonly used spices in Poland and enriches the flavor of many of our native specialties. One of the main uses for whole bay leaves is seasoning soups of all kinds, especially broth, cabbage soup, and borscht. Most sauces, especially those based on stews, are unthinkable without bay leaves. It should not be forgotten that the traditional Polish bigos owes its flavor to this aromatic spice. Bay leaves enhance the taste of almost all meat dishes, go well with fish, and add variety to the flavor of jellies and marinades. It is worth knowing that ground leaves are one of the ingredients of a very popular spice mix - Garam Masala.
