DESCRIPTION
Cocoa butter content: 10 - 12%.
Cacao is prepared (alkalized) the Dutch way, which makes it less acidic and bitter, has a more pronounced color, and makes it more soluble in water. Because it's milder, it goes better with other flavors in the dishes. The low fat content makes cocoa less caloric. Due to alkalinization, cocoa has a neutral pH (7-8), so it should be used in recipes that use baking powder (not baking soda).
