Ground turmeric is an excellent addition to stews, soups and rice. It also perfectly emphasizes the taste of broth, poultry, fish, seafood and various types of pickles.
Use in the kitchen:
• A dye called curcumin is made from turmeric. It is used to color rice, pasta and pickled vegetables.
• Turmeric is used to flavor sauces and poultry dishes.
• Interestingly, turmeric can 'be cheated on saffron', noted famous traveler Marco Polo. Turmeric is similar in color to saffron and although the taste is completely different, it can be successfully used as a substitute.
To increase the bioavailability of turmeric curcumin, it is recommended to add it to dishes in the presence of pepper, since piperine increases its bioavailability. However, you can also easily add it to cocktails and smoothies for amazing color. To make the color more intense, the turmeric or curry should be lightly braised in a little coconut oil or butter.
Turmeric's health-promoting properties are due to the compounds it contains called curcuminoids. It contains many valuable minerals and vitamins (B, E and K). It has antioxidant and anti-inflammatory properties, has a positive effect on the immune system and helps regulate the secretion of digestive juices, resulting in better metabolism. In addition, it affects the circulatory and neurological systems. Applied externally, it supports the lightening of discolouration and has a positive effect on the condition of the hair.
