The couverture is a very high quality chocolate. It differs from normal chocolate in that it has a higher cocoa butter content. It is used to make a smooth and glossy chocolate icing, it can be used to enrobe truffles and decorate pralines. Horeca couverture contains coconut blossom sugar and coconut meat. It does not contain gluten. Minimum cocoa content: 65%.
